Saute of Beef with Vegetable Coulis
Ingredients
- 3 lbs (l.350kg) beef shoulder cut in cubes of 1 inch (3 cm)
- 3 medium size carrots
- 2 medium size white onions
- 3 tablespoons (45mL) of cooking oil
- 2 bay leaves and 3 twined thyme strands
- 2 peeled garlic cloves
- 1 cup (250mL) of red wine
- 6 to 8 cups (1 ½ to 2 liters) of Home Goodness Organic Beef Less Sodium Broth
Preparations
- Peel the carrots and the onions and cut in cubes
- Heat on high heat 3 Tbsp (45mL) of cooking oil, add the meat, let brown, stirring for about 5 minutes. Add salt and pepper scarcely
- Remove the meat. Add the carrots and the onions, brown slightly
- Replace meat, the bay leaves, the thyme, the garlic and the red wine
- Add the Home Goodness Organic beef less sodium broth and bring to a boil
- Put in the oven for 2½ hrs at 375°F (190°C)
- After 2½ hrs, remove the meat, the bay leaves and the thyme
- Degrease the cooking liquid then mix in a blender with the vegetables
- Sieve the mixture and add the meat
- If needed, add more beef broth to fully cover the meat and simmer for 30 minutes
